Honey is a natural sweetener made by bees, and it has a unique ability to stay fresh for a very long time. Unlike most foods, which can spoil quickly if not stored properly, honey can last for years without going bad. Even if it crystallizes and becomes thick or chunky, it is still safe to eat. This is because of the special way honey is made and its chemical makeup.

When bees collect nectar from flowers, the nectar is a watery, sugary liquid. Normally, bacteria and mold love sugar and water, so you might think honey would spoil easily. However, bees have developed a clever process to keep honey safe. First, they remove some of the water from the nectar as they carry it back to the hive. Then, they add enzymes that increase the acidity of the nectar, making it harder for bacteria and fungi to grow.

Once the nectar is in the hive, bees store it in honeycomb cells and fan it with their wings. This fanning helps evaporate even more water, making the honey very thick and low in moisture. Most bacteria and molds need water to survive, so they cannot grow in honey. The high sugar content and low water level create an environment where germs cannot live. When honey is sealed in a jar, it is protected from air and moisture, which helps it last even longer.
