This year, farmers across the United Kingdom are facing one of the hottest and driest growing seasons in decades. The unusual weather is causing many vegetables to look different than what shoppers are used to seeing in stores. For example, cauliflowers are turning yellow instead of their usual white color because the sun is shining directly on them. Normally, the leaves protect the cauliflower heads from sunlight, but with less water and more heat, the heads are exposed. Emilie Vanpoperinghe, who runs a company called Oddbox, says that these yellow cauliflowers taste exactly the same as the white ones. Oddbox buys vegetables that supermarkets reject because of how they look and sells them to people who do not mind their appearance.

Cucumbers are also being affected by the heat. Some are growing in curly shapes instead of straight lines. This happens because the greenhouses where they are grown get too hot, and the plants become stressed. Even with enough water, the extreme heat makes it hard for the cucumbers to grow normally. Pak choi, a leafy vegetable, is getting small holes in its leaves because of pests called flea beetles. These bugs love hot, dry weather, and farmers are not allowed to use certain chemicals to protect their crops anymore. Instead, they use nets, but sometimes that is not enough. Supermarkets usually do not accept vegetables with holes, but some are relaxing their rules so that less food goes to waste.

Potatoes are also growing in odd shapes because of the weather. When it is hot, the potatoes do not grow as one big tuber but instead develop little bumps called knobbles. Lucy Munns, a potato farmer, says that it is hard to sell these potatoes because shops want them to look perfect. However, she believes that these knobbly potatoes are just as good to eat. Many supermarkets now have special sections for "imperfect" vegetables, so shoppers can buy them and help reduce food waste. Experts say that as the climate changes and heatwaves become more common, farmers and shoppers will need to get used to seeing more unusual-looking vegetables in stores. People are being encouraged to be less picky and to try these vegetables, as they are still healthy and delicious.
