In Lucknow, a city in northern India, there is a royal kitchen that has been serving food for nearly two centuries. This kitchen is located inside the Chota Imambara, a large and beautiful building that was built in 1837 by Muhammad Ali Shah, the ruler of the former Awadh kingdom. The kitchen was special because it did not only serve the royal family but also provided meals to ordinary people, especially during religious events and festivals. Even though the Awadh kingdom no longer exists and India does not have kings anymore, the kitchen is still active and continues to serve thousands of people every year during the holy months of Ramadan and Muharram.
Over the years, the kitchen building, known as the Shahi Bawarchikhana, started to fall apart. The walls developed cracks, the plaster began to peel, and parts of the floor were sinking. Seeing this, local residents asked the Archaeological Survey of India to help restore the kitchen. The restoration work began in October and is expected to finish by the end of March. The team is working hard to bring the kitchen back to its original state. They are using traditional materials like slaked lime, wood apple pulp, black gram, natural gum, jaggery, and red brick dust to make the mortar, just like it was done in the Mughal era. They are also using special thin bricks called lakhauri bricks, which are typical of Awadhi architecture.
For the descendants of the Awadh royal family and the people of Lucknow, the kitchen is more than just a place to cook food. It is a symbol of tradition and community service. Every Ramadan, the kitchen distributes around 700 coupons daily and sends cooked food to 16 nearby mosques to feed the poor, widows, and others in need. The menu includes meat curries, flatbreads, kebabs, fruits, and sweets, reflecting the rich food culture of Lucknow. During Muharram, the menu changes to mostly vegetarian dishes at first, then adds meat dishes later. The kitchen follows the old rules set by the former ruler, including the types of dishes, their weight, and quality. For many locals, the kitchen is a place full of memories and tradition, and the restoration is not just about fixing a building but about keeping a centuries-old practice alive.
