When bees collect nectar from flowers, the nectar is a watery, sugary liquid. Normally, bacteria and mold love sugar and water, so you might think honey would spoil easily. However, bees have developed a clever process to keep honey safe. First, they remove some of the water from the nectar as they carry it back to the hive. Then, they add enzymes that increase the acidity of the nectar, making it harder for bacteria and fungi to grow.

Once the nectar is in the hive, bees store it in honeycomb cells and fan it with their wings. This fanning helps evaporate even more water, making the honey very thick and low in moisture. Most bacteria and molds need water to survive, so they cannot grow in honey. The high sugar content and low water level create an environment where germs cannot live. When honey is sealed in a jar, it is protected from air and moisture, which helps it last even longer. However, if you open the jar and use a dirty spoon, you might introduce bacteria and water, which could cause the honey to spoil. To keep honey fresh, always use a clean spoon and close the jar tightly after each use.
